Sweet & Spicy Asian Meatballs Recipe

There is something so darn comforting and fun about meatballs. The quaint little globes are easy to make, and the flavor combinations are unlimited. Serve them with your favorite sauce over noodles or rice, pile them into sandwiches, or serve them as tasty appetizers with toothpicks. A versatile little ball, indeed! So let's talk meatballs, friends, particularly these Sweet and Spicy Asian Meatballs featuring Cherchies® Garlic Seasoning Blend, sriracha, and ginger. 

I usually make these meatballs and freeze them to be later used as an appetizer for guests, but I needed a quick and easy meal for my family one night and served them over rice with this flavorful sauce. Our Cranberry Spinach Salad and Best Darn Garlic Bread accompanied this dish; as suspected, dinner was a hit.

CHERCHIES® GARLIC SEASONING

Ingredients

  • 1 1/2 lb ground turkey, chicken, or pork

  • 1/2 cup Panko breadcrumbs

  • 1 cloves garlic, minced

  • 1 teaspoon (tsp) Cherchies® Garlic Seasoning

  • 1/2 teaspoon (tsp) tsp black pepper

  • 4 green onions chopped

  • 1 egg

  • 2 tbsp Sriracha sauce

  • 1 teaspoon (tsp) freshly grated ginger

  • Cooked Rice (optional- to serve over)

For Sweet and Spicy Glaze

  • Drippings from meatballs

  • 1 jar (10 oz.) Apricot Preserves

  • 1 tbsp soy sauce

  • 2 tbsp Sriracha sauce

  • 1 Tablespoon (Tbsp) cornstarch

  • 1 teaspoon (tsp) rice vinegar

  • 1 teaspoon (tsp) sesame oil

  • 1 Tablespoon (Tbsp) chopped green onions- green part (scallions) only (optional for garnish)

Preparation

Preheat oven to 350 degrees. Line a large baking sheet with parchment paper, spray with cooking spray, and set aside.

In a large bowl, add the meatball ingredients and mix with your hands to combine.   Do not over mix the meat.  Use a 1 1/2" ice cream scoop to measure out perfectly-sized meatballs and place on the greased baking sheet.

Bake for about 20-25 minutes, or until meatballs are golden brown.

While the meatballs are cooking, add the sauce ingredients to a small sauce pan.  Whisk to combine.  Turn the stove on low and cook the ingredients, whisking occasionally, until smooth.  Turn off heat.  With a slotted spoon, remove meatballs from baking pan and transfer to a large skillet.  Add the pan drippings from the meatballs, and the sauce to the skillet.  Turn the skillet on low and cook for a couple of minutes, or until heated through.

Serve the meatballs over cooked rice for a meal, or use with toothpicks as an appetizer.  Garnish with chopped scallions.

Do you have a favorite food that makes you weak in the knees? For me, that would be coconut shrimp, but this dish is often an occasional indulgence because of the fried factor. But behold Baked Coconut Shrimp! Hello!

This delicious recipe (adapted from tablespoon.com), featuring Cherchies® Chardonnay Lime & Cilantro Seasoning and Cherchies® Select Grilling Rub & Seasoning Blend, is a lighter version of its cousin, fried coconut shrimp, as it uses egg whites and is baked to a golden brown in the oven.

Engulfed in a blanket of sweet crispy coconut and served with a spicy apricot-pineapple sauce, this easy-baked shrimp recipe is the perfect treat for dinner, lunch, or as an elegant appetizer for guests. It is healthy, easy, and tasty, and although this dish may be low in fat, it is high in flavor! You may want to grab some for yourself because these succulent morsels will disappear right before your eyes!

Preparation

Preheat the oven to 400 degrees.  Line a baking sheet with parchment paper.  Clean and dry shrimp. Carefully separate the yolks from the egg whites, using the shell as a separator, and reserve the egg yolks for another yummy recipe.  Add the Chardonnay Lime & Cilantro Seasoning to the egg whites and mix.

In a small bowl, beat the egg whites with a hand held mixer until the egg whites make soft peaks, about a few minutes.

Arrange three bowls on your prep surface and place the following ingredients in the bowls in this order, corn starch, egg whites, and the shredded coconut.  Hold shrimp by the tail and dip into the cornstarch, then the egg whites, followed by the coconut and place on the parchment lined baking sheet.  

Place the shrimp on the baking sheet, sprinkle them with Cherchies® Select Grilling Rub, lightly spray with cooking oil, and bake the shrimp in the oven for about 15 minutes or until golden brown.

 While the shrimp are cooking, prepare the dipping sauce.  Mix together the Apricot Preserves, the hot sauce (to taste), and the lime juice.  

When the shrimp are golden brown, remove them from the oven and serve immediately with the dipping sauce.  Enjoy!

Are you traveling this holiday, or will you share a lovely Easter meal with family or friends at home? What do you serve at Easter? In our family, a traditional Easter dinner or brunch wouldn't be the same without a succulent glazed ham. Since Easter is almost here, I thought you would enjoy our family's favorite glazed ham recipe, Cherry Glazed Ham.  

Let's face it: ham is the perfect entree for most holidays and occasions, as it easily pleases a crowd. And what ham would only be complete with a homemade glaze (not the little packets that come with the hams), a homemade glaze? Preparing a glaze takes only a few minutes, and the possibilities are endless. Over the years, I have experimented with our various preserves and hot pepper jams in this basic recipe, and all the results have been just as fabulous. This time, I was craving a glaze bursting with cherries, and this easy sweet-salty ham recipe, featuring our Cherchies® Cherry Butter SpreadCherchies® Champagne Mustard, and just the slightest hint of Bourbon, is the perfect addition to your holiday menu.  

So gather up your guests, grab a jar of Cherchies® Cherry Butter SpreadCherchies® Champagne Mustard, slather on the glaze, and serve this delicious ham with your favorite side dishes for an exceptional holiday meal, and wait for the ooohs and ahhhs!

* Note- Substitute Cherchies® Cranberry Preserves with Champagne for the butter spread for a festive flair!

Prepare the glaze by combining Cherchies® Champagne Mustard, Cherchies® Cherry Butter,  brown sugar, and Bourbon in a small saucepan.  Cook on low until smooth.  Pour half of the glaze over the ham and cook the ham according to the package directions, normally 15 minutes per pound, until warm. Chill the other half of the glaze until later.   When the ham is about a half hour from being done, remove the ham from the oven and pour the rest of the glaze over the ham.  Cook the ham for the remaining time. When the ham is warmed, cool for 15 minutes before serving.

*Note- This basic recipe would work nicely with any of our Cherchies® Preserves or Hot Pepper Jams, depending on your palate. Try them all, and let us know what you come up with:)

Do you love cranberries?  Cranberries are one of our favorites here at Cherchies, and with Christmas around the corner, this easy recipe is the perfect holiday dessert, afternoon snack, or breakfast treat.  

I was inspired by an old recipe I had in my cabinet, and instead of Apricot Preserves as in the original recipe, I added a bit of Cherchies® flair by substituting our Cranberry Preserves for the Apricot and added coconut to the mix. Luckily my hunches were correct as the end result was delicious!

This recipe could easily be made with any of our preserves, our Cranberry Preserves with Champagne, Blackberry Preserves,  Fig Preserves With Cinnamon, or any of our butter spreads, but I was feeling festive and chose Cranberry Preserves:)

So, all you cranberry lovers out there, you need to add this recipe to your Cranberry collection.  You won't be disappointed!  AND, because we love ya, all our cranberry products are on SALE this weekend!

Preheat the oven to 350 degrees.  Grease a 13 x 9 baking dish with cooking spray.  In a medium mixing bowl, combine the oats, coconut, baking soda, salt, and brown sugar.  Add the melted butter to the ingredients and stir until ingredients are combined and crumbly.  

Press half of the mixture into greased baking dish.  Spread the Cranberry Preserves over the mixture. Sprinkle the remaining oat mixture over the Cranberry Preserves.

Bake for about 30 minutes or until golden brown.  Cool slightly and enjoy!
